Chef/Owner Laurent Couvreur: Chef Laurent Couvreur has major credentials under his belt – studying and working with world-renowned Chef Jacques Chibois at the famous Le Royal Gray Restaurant in Cannes.
After several years gaining experience at Michelin starred eateries along the cote d’Azure, he moved to the USA, where he was well reviewed as Head Chef at Chez Jacqueline in New York and featured on US cable TV’s The Food Channel. Returning to Europe as Head Chef at the Ritz Club in London, Laurent is now happily settled in Bath recreating dishes from his childhood and early experiences in the South of France. Using local produce whenever he can, Laurent has been lauded with a handful of awards at Casanis and has listings in The Michelin Guide, Hardens and The Good Food Guide.
Manager/Owner Jill Couvreur: An award winning film maker, saxophone player and entrepreneur, Jill learned her front of house skills at trendy Provence restaurant in New York.

Where Does Our Name Come From?
Casanis – pronounced “Ca-za-neece” is a famous brand of Pastis from Marseille. This aniseed aperitif was created in 1925, when the absinthe ban caused the trend for the “petits jaunes”.
Pastis is an institution in the South of France. It goes hand in hand with a game of pétanque on the village square. Pastis, meaning ‘mixture’ in the Provençal dialect, is made from a blend of concentrated alcohol, star anise (an aniseed essence that comes from the distillation of the star anise plant), liquorice powder, water, sugar and an infusion of numerous Provençal plants such as thyme, rosemary, savory, sage and verbena.
